Maple Ricotta is a fresh, unripened cheese that has a high moisture content, delicate, creamy flavour and short shelf life.
Ricotta can be used as a base for sweet or savoury dishes, in sandwiches, lasagne, dips, or cheesecakes. Smooth Ricotta is a low fat alternative to cream for fruit salad and cakes.
Ingredients used are milk, whey and acetic acid. No colouring or preservatives

Baked Mushroom Omlette
Serves: 2


2 eggs
250g Australian Ricotta Cheese
1/4 teaspoon dried basil
1/4 teaspoon dried oregano
1 tomato, chopped
1 small onion, chopped
6 mushrooms, sliced

Mix together the eggs, cheese, basil and oregano. Add the tomato, onions and mushrooms. Spoon mixture into a buttered quiche dish. Bake at 180°C for approximately 25 minutes or until set. Serve with a tossed salad and crusty wholemeal bread.
