Maple Feta has a white, moist body and can be soft, firm or even ‘crumbly’ in texture. Feta is a milder and creamier cheese than imported varieties, and tends to slice easier and crumbles less.
Whilst it is initially a fresh cheese, Feta is sometimes described as a 'pickled' cheese because once it has been made, it is stored in a brine bath for a maturing period of at least 8 weeks. The brine salts the cheese and keeps it moist.
Our Feta is very versatile traditionally used in salads, also great thru pasta or crumbed and fried as an appertiser.

 

Mediterranean Spinach Fish Parcels
Serves: 4


4 white fish fillets (eg. trevally, rockling or blue eye)
2 tomatoes, sliced
1/2 tablespoon dried oregano
2 spring onions, chopped
100g black olives
1/3 cup dry white wine
80g washed spinach leaves
250g Australian Feta Cheese, crumbled
4 cups cooked white rice, for serving

Place each fish fillet on a large piece of foil and top with remaining ingredients. Wrap up to form pastie shaped parcels.Place in a baking dish and cook for 20-25 minutes at 200°C or until fish is cooked. Serve with rice.
